Cafes solar roasted coffee catches attention of Pueblo officials

PUEBLO, Colo. - The Board of Pueblo County Commissioners voted to put aside Wednesday for the cafe that features coffee roasted with solar-powered equipment.

The commission declared Saturday, August 5, 2017, as Solar Roast Day in Pueblo and Pueblo County.  

“It's just really thrilling for us at Solar Roast because it just shows the community recognizes us what we've been working. We've been working so hard at this for so long now; it's just really thrilling to have a proclamation stating that all these people are behind us. It's a good boost to our confidence,” said Michael Hartkop.

At the event, Solar Roast will launch two new aged coffees, a bourbon-aged coffee, and a wine-aged coffee.

Pueblo's city council will vote on a similar resolution at a later date.
