1 1/3 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1 1/4 cups buttermilk
2 tablespoons unsalted butter, melted
Vegetable oil (for griddle)
Maple syrup (for serving)
Whisk dry ingredients together in a large bowl -- flour, sugar, baking powder, baking soda, and salt. Next, whisk wet ingredients together in a medium bowl -- eggs, buttermilk, and butter and stir into dry ingredients.
Heat a griddle or skillet over medium heat and add oil to prevent batter from sticking.
Scoop batter onto griddle and cook pancakes until bottoms are golden brown and you see bubbles start to form on top (about 3 minutes). Flip and cook an additional 2 minutes.
Serve pancakes with butter and maple syrup, or assorted fresh fruit.
